Super Easy Sugar Cookies

I love sugar cookies but often don't have the time to dedicate to making them.  So, a few years ago I decided to try a new method, and here is what I've done.  Recently I made them gluten free and dairy free and they are still delicious!!  Shared on Allergy Free Wednesdays. and Gluten Free Wednesdays.

Super Easy Sugar Cookies:

1 box cake mix-vanilla(I used a dairy free/gluten free one found in the Healthmarket at Hy-Vee)
2 eggs
1/3 cup oil(I used coconut oil)

Stir everything together well.  Grease a cookie sheet. 

Roll out 1 inch balls of the dough and place on the cookie sheet. 

Taking a glass with a flat bottom dip into a sugar mixture(I like to use 1 cup sugar with one packet of Kool-Aid) and use the sugar coated bottom to slightly flatten the cookie ball.  

The kids thought that they needed more sugar on them so we sprinkled a bit more on top.

Bake in a 375 degree oven for 6-8 minutes.  You can also easily make these into cookie bars by placing them into a greased cookie sheet and pressing to cover the whole sheet.  Bake for about 20 minutes or until slightly golden.

I spiced up these a bit when I made them yesterday by adding some sprinkles to the dough while I was mixing.  I used 1/4 cup of Rainbow Sanding Sugar from Primp my Cupcake.  I received these as part of a review I'm doing and had some leftover after baking cupcakes.  Stay tuned for my review of these awesome products!!

  6. love sugar cookies but never thought to use a cake mix to make them, this just gave me a wonderful idea to use with the little ones this weekend coming, and i just happen to have everything on hand and i like the sprinkle idea.. great find and will have to share with others ;) thanks Dorothy B.
