Gluten Free Enchiladas @rudisglutenfree

Several years ago I came up with a super simple enchilada recipe that I would like to share with you.  I am not kidding when I say super simple either trust me on this one.

You will need:
10 tortillas(I used Rudi's gluten free fiesta)
1 pound meat(tonight I used hamburger but I love using chicken)
1 pound cheese of choice(tonight we used sharp cheddar) shredded
8 oz cream cheese
16 oz sour cream
16 oz cottage cheese
1 clove garlic
1 small onion

Okay, so here's your super simple instructions.

In a medium saucepan combine the garlic, onion, and cream cheese.  Stir until the cream cheese is softened enough to saute the onion and garlic on a low heat.  Now mix in the cottage cheese and sour cream.  I normally keep this one a low heat stirring until it all heats up, but here's a secret!  Once the cream cheese is softened enough to mix the others in you don't have to keep it warm!

Now add the meat into the cheese mixture and stir well.

Okay now, take a tortilla and place some of the cheese mixture inside and roll it up.  I think I probably use 2 heaping Tb's of the mixture per tortilla.  You will do this with all 10 and place in a 9 by 13 baking dish.

roll it up and place in 9 by 13 pan

Once you have all these mixed and rolled up, cover with the remainder of the cream mixture and top with the shredded cheese.

Bake at 350 degrees for at least 20 minutes or until everything gets melted and starts to bubble.  Remove from oven, cut and enjoy.

See I told you I had made a super easy enchilada recipe!  I needed something simple and came up with this shortly after my husband and I got married.  You can also double, triple, etc this recipe and freeze the others in pans.  I love to do that for later on.  Just take it out, put it in the fridge to thaw, and bake!
