Homemade Gluten Free Cheesy Scalloped Potatoes

This is a super yummy recipe that we love here in our house.

Here's what to do:
Preheat oven to 350 degrees.
Get a 13 by 9 baking dish.
Fill it up with thinly sliced potatoes, after peeling them of course.

Now in a medium saucepan:
Melt 6 Tbs. butter.
Once it is melted add in 6 Tbs of flour(I used cornstarch).
Stir until mixed.
Let this sit on low heat for a minute.
Turn heat back up to a medium to medium high.
Add 3 cups of milk(I used almond milk).
You want to mix this up very well and continue to stir it until it boils.
Reduce heat and stir in 2 cups of shredded cheese(sharp cheddar) as well as 8 oz of sour cream.
Stir on low heat until all is melted together.

Pour the milk mixture over the top of the potatoes.

Pour the creamy mixture over the top.


Sprinkle shredded cheese over the top(I normally use about 2 cups-cojack this time).

Yum yum, bake and enjoy!


Place in the over and bake for one hour.
Remove and enjoy!
