Turkey and Rice with Veggies


Still using up that turkey.  I decided to do a turkey and rice casserole with some veggies and a homemade cheese sauce.

You will need:
cooked rice(I used three cups of rice-uncooked, basically I cooked up one 16 ounce bag of brown rice)
4 cups cubed turkey
3 cups coined carrots
2 cups chopped celery
3 cups broccoli
1 small onion chopped up finely
1 batch creamy cheese sauce
1 cup almond milk

This is really super simple.  In a large bowl combine the cooked rice, turkey, carrots, celery, broccoli, and onion.  Stir to get these all nice and mixed together.  Pour the cheese sauce on top and stir that in really well.  Place in a 13 by 9 casserole dish.  Slowly drizzle the cup of almond milk over the top of the casserole to help prevent it from getting crispy or browning.  Bake at 350 degrees for about half an hour and voila! You have made a super easy casserole that my critics love!
