Homemade Cheese Sauce

Here is a great recipe for a make your own creamy cheese sauce.  I like to use this in casseroles or on pasta.  We love this on our macaroni as the cheese sauce(use sharp cheddar cheese for this)!  Enjoy.

You will need:
2 Tb. butter
2 Tb. flour(I just use brown rice flour by itself but whatever gluten free flour or all purpose you want to
     use should work)
2 cups milk(I use almond milk)
2 Tb. lemon juice
4 cups cheese(you choose the type depending on what sauce you need)
    ex. mozzarella for a turkey and rice, cheddar for macaroni and cheese
2 Tb. white wine(optional)-but if you don't use this you may need extra milk to help it reach the creamy
    stage

In medium saucepan over medium heat melt the butter.  Stir in the flour with a whisk.  Let the flour and butter form a paste.  Keep whisking, it will begin to smell a bit nutty.  Now whisk in the milk.  Keep whisking until the milk begins to boil.  Turn heat down to low and add the lemon juice.  Now slowly whisk in the cheese so that it is all melted before you add more.  Last, stir in the white wine.  If the sauce is thicker than you want you can add more milk.
