Gluten Free/Dairy Free Waffles

I found the recipe for these waffles at Money Saving Mom.  I changed a few things so I'm just going to tell you what I did.  If you would like the original recipe please check it out here.

3 cups almond milk
1 cup brown rice flour
2 cups gluten free oat flour
4 Tb coconut oil
4 eggs
4 teaspoons baking powder
2 teaspoons salt
1 teaspoon baking soda

Combine the dry ingredients in bowl.  Mix well.  Combine the wet ingredients and add to the dry mixing well.  Pour into hot greased waffle iron.  Let cook for about 4-5 minutes.

These turned out well, but will still tweak it next time to try to get a fluffier thicker waffle.  The batter was thin.

  2. Wonderful! I'll definitely have to try these out when my mother-in-law next visits! She's always looking for ways to get around her need for a gluten-free diet without giving up the taste and foods she loves!

  8. I'm new to gluten free but I've been told by doc to give up gluten. There are so many recipes out that you don't know what will be good or not. Great to get them from a person so you know they taste good
