Gluten Free Buttermilk Pancakes

I found myself searching for a new pancake recipe that didn't require a dozen eggs per batch for my family.  I came across this recipe and had to try it out.  Below is my take on the recipe.  I changed a few things up and they were really good!  We only had one pancake left over.  Before I could put it in the chicken bucket I had several little hands who had gotten dressed and were ready for more!  So none in the chicken bucket and all in the tummies means it was a success!!  I will have to add a picture of them next time I make as these disappeared faster than I was making them and I never got a picture!

Ingredients:
2-1/2 cups gluten free flour blend (when I use this blend for pancakes my kids claim they're regular pancakes like what I used to make before going gluten free)
2 tsp baking powder(make sure it's gluten free)
2 tsp baking soda
1 tsp guar gum or xanthan gum
1/2 tsp salt
3 cups buttermilk (or make your own by adding vinegar to regular milk)
4 Tb olive oil or coconut oil
2 eggs
1 tsp vanilla (make your own with vanilla beans for the best flavor) or you can use almond, etc


In a large bowl mix together the buttermilk, eggs, oil, and vanilla.  Once this is all mixed together you will add the dry ingredients(you can premix these in a smaller bowl if you wish).  Stir until they are all mixed together, but don't over mix.

Once mixed, place by 1/4-1/2 cupfuls on a hot griddle sprayed with oil.  I use a Mr Mister from Azure with olive oil(saves a ton of money).
I love this guy.  I got mine from Azure Standard and just use regular olive oil in it. 
Allow to cook until bubbles form on the top and the sides are beginning to show cooking.  Flip and cook for a few more minutes.  Serve with butter or peanut butter and maple syrup(we only use real maple syrup and grade b only in our house).

You can add fruit to these pancakes or occasionally that treat of chocolate chips!  I also like to make a fruit sauce or syrup to eat on top of them instead of the maple syrup for a treat as well.  When we add things to the pancakes we normally just eat with butter or nothing at all!  So good!

  2. These look great! I have tried a few gluten free pancake recipes, but my kids have said they're a fail! What kind of gluten free flour do you use? I'll bet that makes all the difference.
