Exceptional Avocado Event Review with Recipe and Giveaway ends 9-1 US only #goodcookcom

Do you like avocados?  I'm not a huge fan of just eating an avocado by itself or on a piece of bread, but I don't mind them at all in recipes.  Makes them so much healthier too!

I recently received a few tools to try out and use from Good Cook and one of them was an avocado slicer.  I'd never even heard of these before!  It's the neatest little tool.  Loving it!  I'd always make a huge mess slicing up my avocados which is probably why I'd use them in recipes.  Did you know you can replace up to half the oil or butter in a recipe with mushed avocado?  Well you can!  And yes I have!

This tool is so cool!  You just press it between the flesh of the avocado and the peel and pull down.  Wallah, you now have avocado slices!  If your avocado is very ripe it won't make the perfect looking slices.  They'll look a bit mushy that way, but still very good.  Since I was using this one in a recipe I wanted it good and mushy so that I could mush it easily.  I use a potato masher to mush up my avocado!  You also have the poking edge on the other end of the tool which allows you to easily remove the pit from the avocado.


Yellow Cake Recipe:

Ingedients:
2 cups flour(gluten free or all purpose)
1 tsp guar gum
1 Tb aluminum free baking powder
1/2 tsp celtic sea salt
1-1/2 cup finely ground demerara sugar
3 large eggs
1 cup water(or almond milk or coconut milk)
1 tsp vanilla(real vanilla not imitation)
1/4 cup coconut oil
1/4 cup mashed avocado

The above recipe will make one 8 by 8 or 9 by 9.  I double the above recipe and make a 9 by 13 cakepan with it!  So below is my normal recipe.

Mix 4 cups flour, 2 Tb baking powder, 1 tsp sea salt, 2 tsp guar gum, and 3 cups finely ground demerara sugar together in a mixer.  Blend well so it is all mixed together.

Now mix in 6 eggs, 2 cups coconut milk, 1/2 cup coconut oil(melted), and 1/2 cup mashed avocado.  Mix until everything is thoroughly combined together.  

Pour into a greased 9 by 13(I like to put my cake pan with a dollop of coconut oil in the oven so it will melt and then use a brush to spread it all over the pan).  Bake at 350 degrees until a golden topped color or between 20-25 minutes.

Let cool and enjoy!  You can frost it or eat it plain.  Either way it tastes wonderful!

  3. I would like them all, but the citrus reamer would come in handy since hubby loves citrus in his iced tea. Usually I just squeeze by hand and do not get near enough juice in there as he would like.
