The Best Gluten Free Sandwich Bread Recipe

A friend gave me an awesome bread recipe that was gluten free.  I was so excited to have one I wouldn't have to fiddle with!  Well, I did fiddle with it but not to make it gluten free.

It is a super easy bread that works well both in the bread machine or by hand.  My family loves it and can easily eat 2 loaves at a time.  That might have something to do with having such a large family though.

Here is the recipe!

1 cup fresh ground brown rice flour
1/2 cup fresh ground oat flour(can sub quinoa for oat if sensitive)
3/4 cup millet flour
1/2 cup tapioca flour
1/4 cup flax seed meal
1/3 cup sweet rice flour
1/3 cup potato starch/corn starch/ or arrowroot starch
1 Tb guar gum
1-1/4 cup hot water
1/4 cup olive oil or coconut oil
1 tsp apple cider vinegar
3 eggs or 3 chia eggs(or equivalent egg replacer)
1 Tb bread machine yeast


For bread machine:
Place the following in the bread machine pan.
Wet ingredients first!
Measure out the 1-1/4 cup hot water, add 1/4 cup olive oil, and 1 tsp apple cider vinegar.

Love how the apple cider vinegar settles to the bottom of this!
Pour the wet ingredients into the bread machine pan.

Crack the eggs, scramble them up, and add them into the bread machine pan.

Now mix all the flours, guar gum, and flax meal together.


Add to bread machine pan.


Make a well and add the yeast.  Now simply program your machine.  Mine has a gluten free setting which is wonderful for us!


Remove from machine when done.  Take out of pan and let cool.  We like to eat ours still slightly warm so the butter/coconut manna melts in.  Delicious!

Easy Homemade No Bake Granola Cereal

Homemade Granola

Ingredients:
8 cups quick oats
1 cup chia seeds

Homemade Granola all ready to get put in bowls.
 Mix all ingredients together in a large bowl stirring well.  It's now ready to serve!  Yes it is that super easy to make!  I stored ours in a jar in the refrigerator, though it only lasted a few days as my family loved this stuff!  Make sure as with all baking that your ingredients are all gluten free.

One serving of Homemade Granola.  I used 1/2 cup size.

Make sure to use plenty of milk on the homemade granola as it will absorb it!

Gluten Free Oatmeal Chocolate Chip Cookies Recipe

I found a recipe for Oatmeal Raisin Cookies on the back of a box of flour mix that I had won in a giveaway. I decided I wanted to try the recipe out but of course I had to make some changes!  Below you will find my version which I subbed with dairy free ingredients as well as made it refined sugar free as well as a few other things!  Enjoy!

Just a bit crunchy on the outside and chewy on the inside these are perfect!  They do not flatten, so if you don't want them a certain shape make sure to change it before baking!

Oatmeal Chocolate Chip Cookies

Ingredients:
3 large farm fresh eggs, well beaten
1 cup chocolate chips(or use dried fruit of your choice ie we really liked dried cherries in this too)
              ---Enjoy Life is the only brand I have found so far that are dairy and gluten free.
1 tsp homemade vanilla
1 cup coconut oil
1 cup honey
1/2 cup finely ground demerara
2-1/2 cups gluten free flour blend(the blend I used was WAY too starchy for me but my regular blend   
          works well in these too)
1 tsp cinnamon
2 tsp baking soda
2 cups gluten free quick oats

Preheat oven to 350 degrees.
Cream together the coconut oil, honey, and demerara.
In a separate bowl mix the flour, cinnamon, and baking soda together.
Slowly add this to the wet mixture.
Mix well.
Blend in the eggs and vanilla.
Now stir in the oatmeal and chocolate chips.
The dough will be very thick and stiff.
Drop by teaspoonfuls onto a greased cookie sheet.
Bake at 350 degrees for 10 minutes or until lightly browned.
Let cool on cookie sheet for 1-2 minutes and then place on wire rack to cool.
Enjoy!



I liked these as a mid morning snack with my coffee.  The kids like them anyway they can get them!  But they are especially good with milk according to them.

Strawberry Oatmeal Bars


I found this recipe on the back of my gluten free oat package from Bob's Red Mill.  You can find their recipe on their website.   However, I did change a few things with my version.  I made it just a bit healthier and used a variety of oats.  These are a great oatmeal bar and make a great breakfast.  I think if you tried by doubling the recipe and using a cookie sheet you could make breakfast bars from this!
You will need the following ingredients:
  • 1/2 cup coconut oil(melted or liquid form)
  • 2 tsp vanilla(pure)- divided
  • 1 cup gluten free oat flour, fresh ground(make sure the oats you grind are gluten free and you're fine)
  • 1/2 cup gluten free rolled oats
  • 1/2 cup gluten free oat groats
  • 1 tsp stevia powder(pure real stevia)
  • 1-1/2 tsp guar gum
  • 1 tsp gluten free baking powder
  • 1 tsp fresh grated lemon zest
  • 1/2 tsp salt
  • 1 cup your favorite sugar free jam (we used a strawberry jam that is naturally sweetened with fruit juices)
Now you're ready to get started mixing!  My mixer has still not been replaced so I have to do my mixing by hand.  This recipes is really fairly easy to mix by hand so grab a bowl and a wooden spoon and let's begin.
Preheat your over to 375 Degrees Fahrenheit.  Grease(I spray with olive oil or coconut oil) an 8 by 8 pan.  You'll want to make sure it is greased well or it will stick and not want to come out of the pan.  These a bit crumbly anyway so you don't want sticking.
In your mixing bowl combine the butter and 1 tsp of vanilla.  Stir together.  Now add the flour, oats(both kinds), stevia, baking powder, salt, lemon zest and guar gum.  Blend until everything is mixed together.

Add the ingredients to the bowl to be mixed.
On to the next step.
The mixture has been mixed and is ready for the next step.
Now you need to firmly press 1 cup of this mixture into the bottom of your baking pan.  Stir the remaining tsp of vanilla in with your jam until it is well blended together(you can omit this step without changing the flavor or texture).  Spread your jam over the top of the pressed in bottom layer.

Press 1 cup of the flour mixture into the pan and then spread the jam over the top.
Sprinkle the remaining flour mixture over the top of the jam trying to keep it even.  You may need to press down on the sprinkles to make the top uniform.  
Make the top and put in the oven.
Sprinkle the rest on the top and press to spread evenly.
Bake 20-25 minutes or until lightly browned.  Take out of oven and cool in pan for 30 minutes.  Cut into 16 bars and serve at room temperature.

We did not eat all of ours in one setting and stored the leftovers in the refrigerator.  They seemed to keep well and were good to eat cold as well.
If you're wondering how to make your own gluten free oat flour here is what I did.  I took some gluten free oat groats and ran them through my grinder.  They made a great flour.  I used the bread setting because they are a hard groat and not small.  The flour worked perfectly in this recipe and a few others I've tried.

Gluten Free Cherry Slices Recipe


This recipe is one that my mom got from a friend that she used to make for us to eat for breakfast on Sunday mornings.  I loved it growing up and so knew that I was going to have to develop a gluten free version of it to enjoy as well.  So now you get to share in the goodness with me by trying out this delicious gluten free version of the cherry slices!
It really is a simple recipe that tastes much more complicated.
Ingredients:
  • 1 c. butter (or coconut oil)
  • 1 tsp vanilla
  • 1-3/4 c. sugar(I used 2 tsp stevia)
  • 1-1/2 tsp. baking powder
  • 2 c. gluten free flour blend --best if you have fresh ground brown rice and sorghum flours
  • 1/2 c. fresh ground oat flour-- from oat groats
  • 4 eggs
  • 1 can cherry pie filling(or a 16 ounce jar of your own pie filling)
Wondermill grinds great grains.
Grind your needed flours: brown rice, sorghum, and oat.
Ground flour.
Flour ground and ready for mixing.
Preheat the oven to 350 degrees.  Grease a jelly roll pan.
Combine the butter, sugar, flour, vanilla, baking powder, and eggs in a medium bowl.
Beat until fluffy.  Dough will be thick

The dough will be thick when mixed thoroughly.
Spread half of dough on greased jelly roll pan.
Spread dough on pan.
Spread half of the dough onto the greased jelly roll pan.
Spread the cherry pie filling on top of the dough.
Top with the remaining dough by spoonfuls. 
Top with dough.
Spread the cherry filling onto the first layer of dough and top with spoonfuls of dough.
Bake at 350 degrees for 40 minutes or until bars are slightly brown on the top.
Baked and cooling.
The cherry slices are done. The gluten free flour browns more than normal flours but tastes wonderful!
Let cool for 10-15 minutes.  Cut into bars and serve.
Makes a great breakfast and keeps well in the refrigerator.  Due to the fresh ground gluten free flours I would not leave this out on the counter for very long or it will mold.

Gluten Free Dairy Free Cornbread Recipe

We love cornbread with our chili or Sutler's Beans as well as many other meals.  I recently found the perfect cornbread recipe for us!  It started with this recipe from Gluten Free Mommy and then I did a few tweaks as per normal for me!  Make sure to check out her recipe and mine!



My recipe is doubled.  I will be sharing my recipe which makes two 9 inch round pans.

Ingredients:
2 cups brown rice flour
1-1/2 cups gluten free corn flour(Bob's red mill sells one)
2 Tb baking powder
4 large eggs, beaten
2 cups milk(almond milk works well)
1/2 cup coconut oil, melted

Preheat oven to 350 degrees Fahrenheit.

Grease two 9 inch round pans.

Mix together the dry ingredients while the coconut oil is melting.  Mix together the coconut oil, milk, and eggs.  Pour them into a well in the dry ingredients.  Mix together well.

Pour half of the batter into each pan and bake for 20 minutes or until the toothpick comes out clean.
