Sweet Creations by Good Cook Cookie Exchange- Dairy and Gluten Free Chocolate Chip Cookies

I recently received an awesome package from Good Cook with items from their Sweet Creations line.  I love making "sweet creations" and this time our challenge was cookies!



In my super awesome package were cookie cutters(watch for those being featured soon), a cookie dropper(an awesome invention!), a brand new high temp spatula with wooden handle and handy conversion chart(ingenious), a handy dandy flex cookie turner(scratch free!), two aluminum cookie sheets(of the large variety), and a set of three sweet mixing bowls.  For this recipe I used the spatula, cookie scoop, cookie turner, and cookie sheets.


We love cookies in our house and the first cookies I had to make were for my husband.  He loves chocolate chip cookies but I honestly can't remember the last time I made them for him.  So I'm sharing our favorite chocolate chip cookie recipe which is also gluten and dairy free.  You can make it egg free by making a chia egg to replace the eggs as well, but since we're not egg allergic we don't do this.  I have friends with an egg allergic little boy so I always test it out to make sure it works before letting you know.  This one recipe gets the A.O.K. for adding the chia egg instead of an egg.

Here's what you'll need:

1/2 cup coconut oil
1/2 cup palm shortening
1 cup firmly packed coconut palm sugar
1/2 cup organic raw cane sugar
3/4 tsp sea salt
2 tsp pure vanilla(I make my own)
2 large eggs or 2 chia eggs
1 tsp baking soda
1/2 tsp baking powder
2-1/2 cup baking flour(gluten free of course) you can try this blend or this blend -they both work well
2 cups of your favorite allergy friendly chocolate chips

I use my kitchenaid to mix these up.  It makes a really good whip and it's needed to make these turn out right(trust me I've messed them up before).

First preheat your oven to 350 degrees Fahrenheit.

Now you are going to mix the shortening, coconut oil, and two sugars together.

Mix, mix, mix these.  I mean really mix them.  Make sure to mix them until they are light and fluffy to make these cookies work.

While these are mixing in a separate bowl mix up the dry ingredients so that it's ready to add to the cookies.

Mix in the vanilla.

Mix in the eggs.

Now mix in the flour and dry ingredients.



Using your cookie sheets and cookie scoop dish out the cookie dough.



Bake for 8-9 minutes.



I leave mine on the cookie sheets out of the oven for 1-2 minutes before placing on a cooling rack.



Once cool they're ready to enjoy.  My husband loves his with fresh cold milk.  I like mine with my coffee.

Gluten Free Oatmeal Chocolate Chip Cookies Recipe

I found a recipe for Oatmeal Raisin Cookies on the back of a box of flour mix that I had won in a giveaway. I decided I wanted to try the recipe out but of course I had to make some changes!  Below you will find my version which I subbed with dairy free ingredients as well as made it refined sugar free as well as a few other things!  Enjoy!

Just a bit crunchy on the outside and chewy on the inside these are perfect!  They do not flatten, so if you don't want them a certain shape make sure to change it before baking!

Oatmeal Chocolate Chip Cookies

Ingredients:
3 large farm fresh eggs, well beaten
1 cup chocolate chips(or use dried fruit of your choice ie we really liked dried cherries in this too)
              ---Enjoy Life is the only brand I have found so far that are dairy and gluten free.
1 tsp homemade vanilla
1 cup coconut oil
1 cup honey
1/2 cup finely ground demerara
2-1/2 cups gluten free flour blend(the blend I used was WAY too starchy for me but my regular blend   
          works well in these too)
1 tsp cinnamon
2 tsp baking soda
2 cups gluten free quick oats

Preheat oven to 350 degrees.
Cream together the coconut oil, honey, and demerara.
In a separate bowl mix the flour, cinnamon, and baking soda together.
Slowly add this to the wet mixture.
Mix well.
Blend in the eggs and vanilla.
Now stir in the oatmeal and chocolate chips.
The dough will be very thick and stiff.
Drop by teaspoonfuls onto a greased cookie sheet.
Bake at 350 degrees for 10 minutes or until lightly browned.
Let cool on cookie sheet for 1-2 minutes and then place on wire rack to cool.
Enjoy!



I liked these as a mid morning snack with my coffee.  The kids like them anyway they can get them!  But they are especially good with milk according to them.

Gluten Free Chocolate Chip Cookies

Who doesn't love chocolate chip cookies?  They are my husbands favorite so of course I've tried out several recipes.  This is not our favorite, but it is a good cookie and very easy to make.  This is the one that my girls are learning to do on their own because of how simple it is.

You'll need:
1/3 cup oil(I use coconut)
1/2 cup sugar(they recommend brown, but I use demerara)
1 cup brown rice flour
1/3 cup cornstarch
2 eggs
1/4 tsp baking soda
1/2 tsp salt
3/4 tsp xantham gum(I use guar gum)
1 tsp vanilla(I make my own)
1 cup chocolate chips(Enjoy life chunks or mini's work really well in this recipe)

Instructions:
Preheat the oven to 350 degrees.
Grease one or two cookie sheets

In a medium bowl mix together the oil and sugar.
Demerara and oil.

Add the brown rice flour and cornstarch and beat well, scraping the sides as you go.

Make sure to try to avoid large clumpings.

Add the remaining ingredients(without the chocolate chips) and mix well.

Simple and easy.

Next stir in the chocolate chips.(try not to eat too many of them, the cookies do need some)!

The dough looks good enough to eat!

Next drop by rounded tsp's onto the cookie sheets.
Moisten your fingers and flatten them some(or don't), they will not flatten on their own while baking.
Bake for 10 minutes or until the edges turn golden brown.
Let cool on wire racks before serving.
