Green Bean Skillet Meal

I love convenience.  I love not having to spend hours on a meal.  Sometimes this is hard when you're gluten free because you have to make a lot of your own stuff as it is so expensive to buy premade.

All ready to eat.  Yum!
One of my favorite ways to save money is to do skillet meals.  This is where you throw everything into the skillet and serve it over rice.

This skillet meal is super easy and a great one that my kids love!

Ingredients:
1/2 pound sausage links(we buy the ones that are Kosher and gluten free as they are normally soy free as well and all beef)
1 pound frozen green beans(I use the leftovers from cooked green beans such as a large Thanksgiving dinner or holiday meal)
1 small red onion, chopped
2 garlic cloves, minced finely
1/2 large green pepper or 1 small green pepper, chopped
1/4 cup of butter or coconut oil

Simply place the butter, garlic, onion, and green peppers in the skillet until they are tender.  Now add the meat and green beans and cook until done!

See how simple that is!  The rice cooks while the meal cooks so you're all set.  We use brown rice or a wild rice blend in our house that cooks in between 45-60 minutes.

  3. Erin, thanks for sharing!! Have you ever done this with chicken? We can't eat any sausage here...but I'm thinking it would be yummy with cut up chicken breasts too!

    1. I think this would be awesome with chicken too! You could even splurge and use shrimp(I've done this before when my uncle brings me fresh shrimp from Florida).

  5. I'm not GF but this sounds good to me. My husband would, however add his own sausage to the meal. Convenience and fast is what I like. I'm sure the pre-made products have a lot of salt in them, so that's not good either. Being GF I'm sure is so hard..I tried it once for 3 weeks. I lost weight and felt rather great!

  6. I am not GF--but I am sugar free --so I would probably nit use the rice--but I certainly like fast and easy!! And this does sound good!

  8. Oooo! I will have to try this! My hubby would love if we had rice with EVERY meal ( I say it's because he's asian lol) but I always run out of ideas to pair it with and this looks super yummy!

  22. This sounds really delicious, but my daughter can't have onions or green peppers, so what would you substitute for them? I'd use Onion Powder, because she can tolerate that. I'll have to try this for hubs and I. :)
