Gluten Free Chocolate Brownies

I have been wanting some chocolate brownies lately but didn't want to have to pay the prize for a box mix for a small pan of gluten free brownies.  I think I've come up with a pretty good recipe!

I took a recipe for an 8 by 8 pan of brownies and multiplied it by 3 to make an 11 by 15 pan of brownies.  I took it out during the last 10 minutes of baking and sprinkled a package of mini chocolate chips on top.  Yum yum and yum!  Oh and if you can have dairy(or if you like coconut ice cream)  top this with some ice cream and chocolate syrup.  Oh I think I may have to go eat another one!

For dairy free make changes in the brackets!

Ingredients:
2-1/4 cup gluten free flour mix(here is a recipe for the one I use)
1-1/2 tsp baking powder
1-1/2 tsp salt
6(1 oz) squares unsweetened chocolate {use 6 oz's of Enjoy Life chunks of your favorite dairy free chocolate}
1 cup butter {use 1 cup coconut oil}
2 cups honey
6 eggs

Preheat oven to 350 degrees.  Grease an 11 by 15 inch baking pan.

Place the butter and baking chocolate squares into a saucepan on low on the stovetop.  Melt these until it is all melted.

Yummy chocolate and butter melting.
Once the butter and chocolate are melted add in the honey stirring well.

To this add the eggs.  Mix well.

In a medium size mixing bowl mix together the dry ingredients.  Place the wet ingredients into a well in the middle and mix well.

Place into the baking pan and bake for 30 minutes.

All mixed up and ready for the oven.
At the 30 minute time take out of the oven and top with your favorite baking chips.  I used the Enjoy Life mini chocolate chips.  Bake for another 10 minutes.

Ready to dig in!!
Remove from the oven and then allow it to cool.  Serve alone or topped with ice cream.

Butterfly Bakery Review- Gluten Free Homemade Goodness

I recently received in the mail a very yummy package.  It contained a container of banana nut mini muffins and chocolate chip cookies.  Seriously, who wouldn't want to receive these in the mail?  And were they good.  Yum yum yum.  Oh yes they were good.

Oh and to make it even better wait until you see the packages.  My kids loved the butterflies!

the mini banana walnut muffins

don't those just look yummy?!

Fionna says yum yum

the chocolate chip cookies

These muffins and cookies were very good.  After their trip to get here you might think they'd be dried out but they maintained their moisture well.  The chocolate chip cookies did get a bit beat up from the trip and about half of them were no longer actual cookies, but that did not affect the taste at all.  My kids were all fighting over who was going to get what pieces.  Needless to say the whole thing was gone in one night.

A bit about Butterfly Bakery. Butterfly Bakery was founded in 1998 by Brenda Isaac.  Her dream was to create sugar free treats that her mother could enjoy.  The business took off and she has since started creating gluten free and no sugar added to that list of yummy treats she bakes.  The gluten free products use whole grain teff flour.  That's right- one flour and they're so good!  I have used teff in my baking before but never as the lone flour.  I may have to look into this!

You can find the Butterfly Bakery by going to their website and facebook.  A quick fact about the Butterfly Bakery is that they have 75 Different varieties of Sugar-Free, No Sugar-Added, Gluten-Free and Whole Grain baked goods.

Wait!  There's more!  This bakery located in New Jersey is now selling their yummy products on Amazon!  Go check them out!   Pin It Now!
