We love cornbread with our chili or Sutler's Beans as well as many other meals. I recently found the perfect cornbread recipe for us! It started with this recipe from
Gluten Free Mommy and then I did a few tweaks as per normal for me! Make sure to check out
her recipe and mine!
My recipe is doubled. I will be sharing my recipe which makes two 9 inch round pans.
Ingredients:
2 cups brown rice flour
1-1/2 cups gluten free corn flour(Bob's red mill sells one)
2 Tb baking powder
4 large eggs, beaten
2 cups milk(almond milk works well)
1/2 cup coconut oil, melted
Preheat oven to 350 degrees Fahrenheit.
Grease two 9 inch round pans.
Mix together the dry ingredients while the coconut oil is melting. Mix together the coconut oil, milk, and eggs. Pour them into a well in the dry ingredients. Mix together well.
Pour half of the batter into each pan and bake for 20 minutes or until the toothpick comes out clean.

ReplyDeleteI have yet to find a gluten free corn flour that I can buy in bulk. We really like the Bob's Red Mill one and just wish they'd make their GMO free one gluten free as well.

Deletei halved this recipe.......did not turn out very good! 1 Tablespoon of baking powder made it taste chalky. I would recommend not halving it!
