I did have pictures on the whole process, but it seems my children decided that you didn't need to see those and deleted them. So here is what you do to make this yummy cheesecake:
3 packages(8 oz each) of cream cheese, softened (or you can do like I did and use this great recipe)
3/4 cup sugar (I used demerara)
3 eggs
1 tsp vanilla
2 cups(12 ounces) chocolate chips, divided --I used 1 cup Enjoy Life Foods chocolate chunks and 1 cup of their mini chips
1 graham cracker-esque crust---recipe HERE
2 Tb heavy whipping cream
Heat oven to 450 degrees F.
Beat the cream cheese and sugar in a large bowl until well blended. Works better if you have a mixer for this, but if the cream cheese is soft enough you can do it well by hand.
Blend in the eggs and vanilla.
Stir in 1-2/3 cups chocolate chips(I was naughty and used all 2 cups opting out of the ganache)
Pour into crust.
Bake 10 minutes.
Without opening the oven door reduce the temperature to 250 degrees F.
Continue baking for 30 minutes or until it is set.
Remove from oven to wire rack.
Cool completely
Cover and refrigerate until thoroughly chilled.
Place remaining 1/3 cup chocolate chips and whipping cream in a small saucepan. Heat on low until the chips are all melted, stirring constantly.
Cool slightly.
Pour over the top of the cheesecake and refrigerate agin to help it set. At least 15 minutes.
Now cut, eat and enjoy!!
