My thoughts:  This was not a book I would ordinarily have picked up.  Not my style, and just not something I normally read.  However, I am very glad that I was able to review this book as I really did like it!  I am not normally into sci fi or anything that is quite like this.  I loved learning about Jagger and the descriptions of the angels/demons in this book.  I would have to say that I enjoyed this book!  It was a slower read for me than some of the other Christian fiction that I normally read, but it was well worth it!

My thoughts:  This book combines some of my favorite passions/hobbies of nursing and the Civil War.  I have reenacting the Civil War for over 20 years now and am also an RN, BSN!  This was an awesome book!  Just like all the other books in this quilt series I found myself unable to put it down!  I highly recommend that everyone pick up a copy of this book and give it a good read!

Gluten Free Cherry Slices Recipe


This recipe is one that my mom got from a friend that she used to make for us to eat for breakfast on Sunday mornings.  I loved it growing up and so knew that I was going to have to develop a gluten free version of it to enjoy as well.  So now you get to share in the goodness with me by trying out this delicious gluten free version of the cherry slices!
It really is a simple recipe that tastes much more complicated.
Ingredients:
  • 1 c. butter (or coconut oil)
  • 1 tsp vanilla
  • 1-3/4 c. sugar(I used 2 tsp stevia)
  • 1-1/2 tsp. baking powder
  • 2 c. gluten free flour blend --best if you have fresh ground brown rice and sorghum flours
  • 1/2 c. fresh ground oat flour-- from oat groats
  • 4 eggs
  • 1 can cherry pie filling(or a 16 ounce jar of your own pie filling)
Wondermill grinds great grains.
Grind your needed flours: brown rice, sorghum, and oat.
Ground flour.
Flour ground and ready for mixing.
Preheat the oven to 350 degrees.  Grease a jelly roll pan.
Combine the butter, sugar, flour, vanilla, baking powder, and eggs in a medium bowl.
Beat until fluffy.  Dough will be thick
Dough is ready to work with
The dough will be thick when mixed thoroughly.
Spread half of dough on greased jelly roll pan.
Spread dough on pan.
Spread half of the dough onto the greased jelly roll pan.
Spread the cherry pie filling on top of the dough.
Top with the remaining dough by spoonfuls. 
Top with dough.
Spread the cherry filling onto the first layer of dough and top with spoonfuls of dough.
Bake at 350 degrees for 40 minutes or until bars are slightly brown on the top.
Baked and cooling.
The cherry slices are done. The gluten free flour browns more than normal flours but tastes wonderful!
Let cool for 10-15 minutes.  Cut into bars and serve.
Makes a great breakfast and keeps well in the refrigerator.  Due to the fresh ground gluten free flours I would not leave this out on the counter for very long or it will mold.

My thoughts:  Confession- When I first started reading this book I thought it was going to be all a love story with no suspense or mystery involved.  Boy was I wrong!  I love a good book with lots of suspense and mystery and this one had it all plus some love thrown in!  Definitely a good read!  I started reading this book while I was waiting for some testing to be done and finished it in the bath last night.  Yeap it was that good that I just really didn't want to stop reading it!  Highly recommend you pick up a copy of this book and give it a  read.  You will be pleasantly surprised and fall in love like I did!

My thoughts:  I fell in total love with this book.  I love books set in England as I love envisioning the scenery and what it is like as my grandma came from England.  This book was wonderful as you're wondering if Kate will give up true love for her family or if she'll choose her own happiness over theirs.  Definitely recommend this book for anyone wanting a good read!

Gluten Free Peanut Butter Sheet Cake


I remember my mom making this cake often when I was young and have longed to get to eat it again.  I finally got my chance tonight when I recreated it!  So delicious.  I made mine a bit healthier but it is still not one that is so healthy you can eat the whole thing!  Well you could, but with my luck I'd gain about 20 pounds.
I think this is a fairly simple recipe to follow.  I have no clue where the original recipe came from, but this one was passed to me from my mother and made gluten free/process sugar free/dairy free by me!
Ingredients:
  • 2 cups gluten free flour blend(you can find my blend HERE)--I grind the brown rice and sorghum with my wondermill!
  • My batch of gluten free flour blend.  I use freshly ground brown rice and sorghum flours plus some cornstarch and tapioca flour as well as a bit of guar gum.

  • 1 tsp baking soda
  • 1-1/2 cups finely ground demerara sugar
  • 1/2 tsp salt
  • 1/2 cup applesauce
  • 3/4 cup coconut oil
  • 1/2 cup all natural peanut butter(the one I use is just peanuts ground up, nothing added)
  • 1 cup water warm
  • 2 large farm fresh eggs, beaten
  • 1 tsp vanilla
  • 1/2 cup buttermilk(now to be dairy free you take your dairy free milk, put 1 TB white vinegar in the bottom of the measuring cup and fill the rest of the way with your milk--I used coconut milk
Icing
  • 1/2 cup evaporated milk(very easy to make your own with coconut milk)
  • 1 cup finely ground demerara sugar
  • 1 Tb coconut oil
  • 1/2 cup chunky peanut butter(same thing just peanuts ground up with chunks this time)
  • 1/2 cup dairy and gluten free mini marshmallows(found these in my local Hy-Vee)
  • 1 tsp vanilla
Preheat oven to 350 degrees.
Mix the flour, soda, sugar, and salt together in a bowl and set aside.
The dry ingredients mixed together.

In a saucepan bring applesauce, oil, peanut butter, and water to a boil.
Pour over the dry ingredients and mix well.
Add beaten eggs, vanilla, and buttermilk.  Blend well.
Batter all mixed up and ready to go.

Pour batter into a greased jelly roll pan.
Pour in pan and place in oven.

Bake for 15-18 minutes or until center is set.

As soon as you remove the cake from the oven prepare the icing.
Combine the evaporated milk, sugar, and oil in a saucepan over medium heat.
Bring to a boil and cook there for 2 minutes stirring constantly.
Remove from heat and add the peanut butter and marshmallows.
Stir until they are all melted together.
Stir in the vanilla.
Pour and spread over the still warm cake.
Okay now you can eat it!  Yummy!

Allow to cool.  Eat right away or cover and save!  I eat a piece as soon as it's done and then save the rest for later!

My thoughts:  I loved the O'Malley series of books by Dee Henderson and was thrilled to see that she was beginning to write about the love stories of these characters.  I loved Jennifer's story in the series and loved this book even more.  It is not very thick but is definitely one that you will want to keep reading until you get to the end and then you find yourself wanting more!  I know at least I am wanting more from this series and would love to see more in depth of what happens next for Jennifer and Tom.

#OGIOwines Pinot Grigio Wine Review -The Pitch List



I have to start by saying that I'm not a huge wine drinker.  I tend to use it more in cooking than actually drinking it.  And when I do drink wine I like the sweet fruity ones.  I was thrilled to get to review the Pinot Grigio wine by Ogio Wines.  

The Pinot Grigio is a dry white wine with a pale straw color retailing at $12.99 per bottle.  It does have a high acidity.  You can learn more about how this wine is made and the statistics by simply going to their website to the Pinot Grigio page!  This is what I would call a perfect wine.  You can use it in cooking but also drink it with any meal really. It pairs well with all foods including Thai, Mexican, and Indian.  It has a mellow flavor with hints of fruit(mainly a citrus taste for me).  This is the perfect wine for sipping on while soaking in the tub.  I've been doing a lot of soaking in the tub so trust me on this one!

Ogio Wine began in Italy using only the finest processes and fruit from northeast of Venice.  They began in the early 1900's as a family owned and operated business.  Now on their third generation of wine makers they are still family owned and dedicated to making the finest wines.  

They make and sell three different wines.  The one I reviewed, Pinot Grigio, as well as an acclaimed and awarded Prosecco, and ending with a red wine called Tuscan Red.  All wines are made in Italy but are slowly making their way to the United States for purchase.  They are already available in some areas but won't be available in others until 2014.  You can check out their Find a Store tab to figure out where they are available near you for purchase.  My closest store is over 400 miles away so I don't think I will be driving off to buy more just yet!  The 10 major cities that they are available in currently are:  San Francisco, Seattle, Chicago, Charlotte, Boston, Los Angeles, Miami, Dallas, Denver, and New York.  You can also order online.  

Let's talk shipping now that I mentioned you can order online.  I was pleasantly surprised with how well this bottle was shipped!  It had a very strong and sturdy wrap around it plus extra wrap to keep it from moving around in the box.  It remained totally intact and short of someone throwing it very hard did not look like it would be easy to break the bottle.  I also received a pair of flip flops with the Ogio logo on them.  I'm not a huge flip flop wearer, but these are super cute.  Unfortunately, I have child size feet(think size 3 in kids) and these are a bit too big for me.  I can't seem to force myself to give them away yet though so they are staring at me and begging to be worn!

If you want a great recipe to use this wine in try out my Homemade Gluten Free Cheese Sauce.  It is wonderful with this wine.  I was a bit hesitant at first as I normally just buy the cheap wine for cooking(yeap shame shame on me) and didn't want to waste a fine wine like this.  But I have to say using a good quality wine like this made the flavor of my cheese sauce that much more amazing!

My thoughts:  I was spellbound by this book.  I loved the story of Last Chance Justice and how Lynn along with her daughter and her beau solve his mystery.  I personally am hoping for a sequel to this book as we've got two love stories(well at least I'm seeing two love stories) coming off of this one!  I definitely agree with Rachel's choice in men though. . . .

Grandma's Pumpkin Bread Recipe -Modified by Me


The best(though not the healthiest) pumpkin bread!
A few years ago I got a cookbook at a garage sale that I wanted to try out.  It was the 1982 Holt County Cookbook (Holt County, MO that is).  I was going through and found a wonderful sounding pumpkin bread recipe.  I wanted to try it so bad.  Then I read the by line and realized my grandmother(mom's mother) had actually submitted the recipe!  I was unknowingly going to make a family recipe!

This recipe is very moist and oh so melt in your mouth good.  I have changed up some things of course.  I've made it gluten free.  It would be dairy free and sugar free if I could figure something out to do with the pudding mix, but it makes this so moist that I don't have the heart to cut it.

I also added the pecan topping which is so yum on top!

Ingredients:
5 eggs
2 tsp stevia(scant)
3/4 c. coconut oil
3/4 c. applesauce
2 c. cooked pumpkin
1 or 2 pkgs instant coconut or vanilla pudding(1 if the large size)
1 tsp. soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp guar gum

Topping:
1/2 c. chopped nuts(pecans)
1/4 cup muscavada(this is an organic version of brown sugar--if you don't have just use brown sugar)

Beat eggs, applesauce, and coconut oil together in bowl.

Ready to mix it all up!


Add pumpkin and blend well. 

Add sifted dry ingredients, make sure to mix these in well and try to avoid lumps 

Fold in pudding mix.  

Mix well.  


Mix the muscavado and pecans together and sprinkle on top of the bread.




Place in greased loaf pans and bake at 350 degrees for 40-45 minutes.




Freezes well, very moist.

Isn't this a neat idea?  I had never heard of anyone doing this before and think it is very "cool"!  I have some friends getting married this summer and this would be a perfect thing to hold on to over the years to help keep the memories alive!
